Az-Azeytun Arbequina Extra Virgin Olive Oil 500ml

Arbequina picked green: fresh, grassy and expressive.

Az-Azeytun pick in mid-October, when only about one olive in ten has started to turn black, to keep the freshness, aroma and polyphenols of green fruit. Picking starts at seven in the morning and stops if the day gets too hot, so the olives reach the mill cool. The paste is worked for 25–30 minutes, and the filtered oil rests in stainless steel under nitrogen until it is bottled.

On the nose it is like walking through the countryside and crushing the grass underfoot: green almond, kiwi, tomato leaf and green banana.

Palate: Well balanced, with a slightly pronounced bitterness and pungency. A high polyphenol content gives it intensity and complexity.
