Az-Azeytun Oliana Extra Virgin Olive Oil 500ml

Oliana is a newer variety, soft, floral and fruity, pressed here on its own.

Az-Azeytun pick in mid-October, when only about one olive in ten has started to turn black, to keep the freshness, aroma and polyphenols of green fruit. Picking starts at seven in the morning and stops if the day gets too hot, so the olives reach the mill cool. The paste is worked for 25–30 minutes, and the filtered oil rests in stainless steel under nitrogen until it is bottled.

Fresh and elegant on the nose, with rose, orange peel, tomato leaf and green almond, and a smooth palate that ends on a subtle sweet note.
